For today I wanted to have something easier to drink. Something with a nice fruit and a luscious and juicy body. By checking the cellar my eyes remained caught by this very expressive label. A hedonistic Tempranillo ? Yes, that should do the trick ! .....

Recently I have been able again to acquire some bottles of older BDX wines. The dealer told me already in the beginning, that they have been kept in a very cold and humid cellar and therefore the labels suffered (see pictures) but in return the filling levels would be very good. And yes indeed. A wine out of the mid 80’s with a high-fill level is something beautiful but if even a ‘67 is showing no loss then we really can talk about very good storing conditions. So never mind moldy or tarnished labels. The only harm they are .....

Medaillons of venison fillet and stewed root vegetables

Ingredients:
500 gr. Venison fillet (sliced in 4 medaillons)
50 gr clarified butter (or grapeseed oil)
1 carrot
1 celery (not too big)
½ leek
3 bay leaves
6 juniper berries
½ liter of a dry red wine
½ liter of game (or beef) stock
seasalt
pepper
rosemary
nutmeg
2-3 tablespoons of cranberry jam
½ tablespoon of forest honey
some Aceto Balsamico
2 garlic cloves
3 shallots
Preparation:
Cut the shallots, the garlic, the leek, the carrot and the celery in bigger pieces and fry them until they assume a golden brown colour. Then deglaze everything with the wine and the stock, add the bay leaves amd the juniper berries and let the sauce .....
