About Rosé, Schiller and Clairet!

I have always been a very big fan of “Rosé”. It suits all kind of dishes and you can drink it in the spring, summer autumn or winter time. A couple of years ago, Rosé was still having a bad reputation due to the fact that a lot of producers got “disposed “of their low quality red grape material by producing a rosé -coloured liquid. But that has changed. Two years ago, I already wrote my first article about Rosé and its new renaissance in the world of wines.

Majoran Nudeln – Marjoram Noodles
The typical German – Austrian cuisine of the Banat Highlands always brings back nice memories from my childhood, when my grandma used to cook delicacies such as beef boiled in wine and spices served with “rosa” potatoes and sour cherry sauce, dumplings stuffed with prunes or apricots, Kaiserschmarrn (a kind of “omelet” made of eggs, flour, sugar, milk and served with blackberry or cranberry marmalade) Schupfnudeln – finger shaped dumplings made of potatoes, dusted with powdered sugar and cinnamon and served with homemade apple compote, square shaped pasta “Tascherl” with boiled fresh .....

Philipponnat Rose Reserve brut

That’s already a nice sparkler just by its colour. A soft salmon-onionskin-pink tinge and the very “rousing” mousseux with very fine pearls makes immediately lust for more. The nose is crystal clear and very fruity. Strawberries, redberries and also some soft lactic notes like cream or butter are composing a very nice symphony. At the palate it foams up very nice and, despite of a partial malolactical fermentation, it still owns a very mineraly acidity, which gives this wine structure and freshness. Goulash … differently

Ingredients:
- 1 kg beef and porc meat mixed
- 2 bay leafs
- 5 juniper berries
- 300 grams of onion
- 1 big, red paprika
- 1 carrot
- 3 garlic cloves (or more if you want)
- ½ liter of beer (Pils or Lager)
- ½ liter beef stock
- salt
- pepper
- nutmeg
- 1-2 teaspoons of sweet paprika powder
- 2 tablespoons of tomato paste
- ½ teaspoon of ginger paste
- 1 teaspoon of green curry paste
- rosemary powder
- 2 tablespoons of Worcester
- 3 tablespoons of Balsamico
- 2 tablespoons of honey
- some caraway seeds
- some grape seed oil to stir-fry
- cream
Preparation:
Cut the meat, the onions, the garlic, the paprika and the carrot in pieces (not to small). Brown the meat with the grape seed oil. Then add .....

Silvaner Landart 2008

This is a relatively young winery with just a couple of hectars of vineyards. But nevertheless they are already offering classic styled Silvaner wines, which are simply impressive, because they are different and no mainstream. This one here is their basic line but already screaming for aeration. After one hour in a carafe it shows a very fresh light and clear yellow-green colour. In the nose wonderful and classic Silvaner style. Yellow apples, some hints of bananas, pears and honey-melons combined with earthy, minerally notes. But never becoming too loud or too pronounced. Chateau de Monthelie Eric de Suremain 1996

This winery keeps impressing me with its price-performance-ratio. Everybody is looking to the north, to the Cote d’Or. But also in the southern burgundy region, you can find very nice and first of all still affordable wines. This one shows a typical, bright garnet-red with a slight carmine-red touch. The nose is a bit closed in the beginning, but then with time, more and more Pinot Noir. Red fruits like red currant and rasberry, french nougat and hazelnuts paired with some light lactical and earthy notes. The wine appears incredible fresh, yes almost etheral. Carl Reh Merlot La Cetate 2003

A very deep garnet-red with a soft red-brown hue is flattering the eyes and its very clear and fine nose is making lust for more. Brown spices like cloves, cinnamon and walnut are dominating the bouquet. Dried plums and some hints of cassis and strawberry marmelade are forming the fruity part. The wine seems a little bit woody and market-driven but nevertheless very good made. At the palate medium bodied with a decent pressure, ripe and good integrated tannins and a good finish. Nice wine.

Casa Davino Cabernet Sauvignon Grand Classe 2002

After 2-3 days of decanting in the bottle, the wine shows a fine-grained depot and a nice, deep ruby-red and very healthy colour. Its nose needs some aeritation to offer you its interesting flavours of dark fruits like cassis, blackthorne, black-berries and some “smoked” red paprika. Lactical notes like butter and scents of leather are smoothening the bouquet. Fine tannins and a still lively acidity are giving this wine structure and still some more potential for further ageing. All in all a very nice aged Cabernet and a brilliant companion for food.

Cabernet Sauvignon River Route Limited Edition 2002

The wine shows a deep garnet-red with a red-brown margin. Its nose is very oxidative like brown apples and licorice but also dried plums and old wood are recognizable. A very obvious influence of oxygen. At the palate spiky, obviously very aged and metalic. There are still some tannins left but the main impression is its high amount of acidity. This wine is already fading away, what shows also its short and adstringent aftertaste. Drink it now !
